These turned out pretty good. I forgot to buy the fuit topping for them so not as good as the ones in the pictur of the recipe but we are going to make them again and make the fruit toppings.

Lemon-Scented Broccoli Soufflé, Green salad with Avocado Dressing
This was so yummy i cant wait to make it again. Although when i went to make it i saw that there wasnt any meat int he meal and my husband has to have meat or thinks its not a meal. So i made the stuffed chicken from teh previous night(scroll down to see the Cheese stuffed Chicken with Avocados). So i made the souffle and then i put the chicken on teh bottom of the cassaroel dish and topped it with the broccolli and it turned out way yummy.

And then for the Green salad, i jut cut up some romaine lettuce and put tomoatoes, yellow and orange bell peppers on it and some green onions diced. Then we had an Avocado Dressing that my friend had given to me. I loved it and so did my 3 yr old and my husband, who by the way never eats salads, he went back fro anothe rportion of salad with the dressing on it.

Avocado dressing (or spread depending on how thick yours turns out)
1 large avocado
2 teaspoons olive oil
dry chives
basil
sea salt
pepper
1 lemon (I juiced 1.5 lemons so I have no idea how much I used in regards to tsp./tbls.)
Add avocado and olive oil to blender and blend until mixed together. NOTE: It will not mix entirely right away. It will still be slightly chunky. Add in seasonings and turn on blender. While running add in lemon juice (you can do this before turning it on..I find it mixes easier if I do it this way). Blend until smooth.
Egg Sandwich for Breakfast
Well i dditn havet his one planned but needed to use some cresent rolls up int he house so i just made me and the kids some sandwiches.
Ingredients:
Egg(cook all the way thru)
Sliced Tomatoes
Muenster cheese
Mayo(just a little)
Cresent roll
Cooked up the egg and sliced the cheese and tomoatoes and then threw it all on the bread.

Cheese Stuffed Chicken with Avocados
Man i am so happy i get decided to start eating healthy. This one isnt one of the healthiest but it is better than what we use to eat. LOL
Here is the recipe website:
8 chicken breast halves, skinless and boneless
1/2 tsp seasoned salt
1/2 cup butter at room temperature
1/2 tsp dried leaf oregano, crushed
1/2 tsp chopped fresh parsley 4 oz Havarti or Monterrey Jack cheese, cut into 8 slices
1/2 cup seasoned bread crumbs
1/2 cup dry white wine Avocado slices Tomato wedges
Preheat oven to 375 degrees (190 degrees C). Wash chicken breasts; pat them dry with white paper towels. Place chicken breast pieces between sheets of plastic wrap. Pound with the flat side of a meat mallet until thin and about doubled in size. Sprinkle seasoned salt over chicken. In a small bowl, combine butter, oregano and parsley. Spread half of the butter mixture over one side of the chicken breasts. Top each breast with a slice of cheese. Roll up each chicken breast tightly, tucking in ends to make each stuffed breast approximately the same length as the other. Place in a shallow 1-1/2 quart casserole. In a small saucepan, melt remaining butter mixture and brush over chicken. Sprinkle with bread crumbs. Add wine to casserole dish. Bake, uncovered, 30 to 40 minutes or until tender and browned. Be careful not to overcook. Garnish with avocado slices and tomato wedges.

I think that is all i got to say, LOL. My Uncle had asked me to find breakfast, lunch, snacks and dinners. So here is my first breakfast. And oh did it taste yummy. Instead of syrup on it, i put some applesauce on the top and then ate some fruit with it on the side.
Tell you the truth i think my meals will be healthy meals for me, but when my hubby gets the condiments on them his turns out to not be so healthy. He and the kids put syrup on their pancakes this morning.
Here is the site that i got it from:

1/2 cup unbleached flour
1/4 cup soy flour
1 tablespoon baking powder
1 1/2 cups (360 mL) plain soymilk
2 (200 g) bananas, in chunks
1 teaspoon vanilla extract, optional
Place all ingredients, except bananas, in Vita-Mix container. Secure two-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #4 or #5. Run for 10 seconds. Reduce speed to VARIABLE, speed #2. Remove lid plug. Add bananas through lid opening. Replace lid plug. Baked Oatmeal with Cranberries
Here is my first of the healthy meals or snacks that i am starting fro my Uncle. Well i started to look for recipes and started to notice that we have none the healthy recipe ingredients in our house. LOL So i had to make a grocery list and go shopping for alot. LOL It was fun tho to see what was healthy and what wasnt. I will admit i do have a few recipes for the next two weeks that arent all taht healthy but heathlier than what we were eating.
But here is our first Breakfast/Snack recipe.

I got it from the site above and couldnt wait to make it. Had an adventure finding the ingredients but also found a new store int eh mean time that i will shop now everytime i need groceries.
With this recipe tho i didnt use the exact ingrediaents, I have some troubles using the exact ingredients. LOL But i used orange-Cranberries instead of regular ones. And then i used peacons instead of walnuts. Only cuz we had a huge bag of peacons in our house.
Eating healthy
My Uncle Neil, who is a fitness expert called me last week sometime and was telling me how he liked my blogging about my recipes. So he asked me if I would help him wiht some recipes and making them then taking pictures. So i told him i would love to help him out and it would get my family to start eating healthy. I have been watning to eat healthier for a few years now. But being pregnatn didnt help that much. So now that i am done with havign kids and want to get back to my high school figure(my hope) i figured it was the perfect time to start and to help my uncle out with his website. So we had our last of eating out this week and potatoe filled foods. LOL
So here we go with a healthier life and getting our kids to eat more of a variety of foods.
But here is one last meal taht is our family favorite that we will only make maybe once a month if that since it is packed with carbs. It is Sheapards Pie and we love it so much. But i put a little twist on this one. We didnt have hamburger meat but we have tons of chicken so i cooked up some chicken and cut it up and threw it in. Here is the recipe i used but then tweeked.
1 lb ground beef
1-2 cups mixed veggies
1 can cream of mushroom soup
6-8 Potatoes, depends on size
1 cup shredded cheese, any kind you like
1 cup shredded cheese, any kind you like
Brown the beef and dump in the veggies with the meat and add the can of soup. Cook till its warm. In the mean time get your potatoes washed and peeled and cut into smaller cubes so that you can boil them to make fresh potatoes. Once they are soft, drain and put the potatoes back in the pan and mash them up to your liking and add butter and milk. I add sour cream to them and some shredded cheese. Mix the potatoes up. After all that get a casserole dish and put the meat mixture int he bottom eand then top it with the potatoes and add sheddred cheese to the top of the potatoes.
Cook int he oven on 350 degrees for 25-30 min.
And like i said we used chisken instead of ground beef and i only used corn and green beans but all veggies can go in it. We love to mix things up a little.
