Stuffed Bell Pepper


For lunch today i didn't know what to have but didn't want a sandwich. So i got all the ingredients out of the fridge that looked good and came up with this stuffed bell pepper.


Ingredients


Half Bell Pepper

Diced Ham

Diced tomatoes

Alf Alfa sprouts

Shredded carrots


And i just layered the ingredients inside the bell pepper like i wanted(the way i listed them)

Meatball Sandwich


Well the other day iw as lookinga t what we had int he house and what i could make. Well i saw a loaf of french bread that i was planning to use fro garlic bread with pizza but it had been a few days and it was getting hard. So i decided to make meatball sandwich.


So made some of my homemade spaghetti sauce but without the meat.


Spaghetti Sauce Recipe


Diced onion

2 cans whole tomatoes

1 can tomatoe sauce

1 small can tomatoe paste

Oregano

Bay leaves

Garlic salt


I throw all of these in together and let them simmer together fro about 20 min.


As for the meatballs i just used packaged ones that i had in the deep freezer. Warmed up according to the package.


Then i added about 3 cups of the sauce to the meatballs and let them simmer together for about 20 min. Then i cut the french bread in half and dug out the bread in the middle of the bread so the meatballs could sit in there and not roll around and put in the sauce over. Then i grated some cheese and put it on top. Then i popped the pan in the oevn at 350 degrees and cooked for about 20 min till the cheese was melted and browned alittle.
As for the salad jsut cut up veggies and lettuce and added what dressing we liked.

Super Tostada Rancheros


This is what we had last night for dinner and I loved it. Although i crushed up my tostada and had it like a taco salad. LOL But ill give you the recipe ans then ill tell you how we had ours. We kinda used this recipe as a guide then did what we wanted.

1 can (15 1/2 oz.) Refied Beans, warmed
6 Tostadas
2 cups cubed cooked chicken
3/4 cups Hidden valley Ranch(only cuz it was on the back of the bottle)
1 cup Shredded cheese

Sliced green onions and diced tomatoes(optional)

Spread abotu 1/4 cup refied beans on each tostadashell. Combine chicken and dressing: divide evenly onto tostadas. Sprinkle with cheese: garnish with green onions and tomatoes, if desired. Cut tostadas into quarters:serve.

Makes 6 servings.


Well there is the recipe and you can make and do waht you want with it. But this is how we did it last night.

Well i deep fried some corn torillas to make my tostadas, we dont buy the already made chips or tostadas. And with the chicken i had just gotten a $5 whole cooked chicken at Sam's that was already cooked. And my husband just took it off the bones and all. It was nice and tender and moist. YUMMY!~! Then i sauteed up some bell peppers and onions and diced tomoatoes and some lettuce. I guess you could say ours was more a taco salad on tostadas. LOL But i enjoyed it was happy with how it turned out.

Asian Shrimp Salad


Well i was lost on what to have fro dinner tonight and i told a friend of mine that i had 3 freezer bags of shrimp in my frezzer and she sent me a site that just had shrimp recipes. I thank her for that cuz then i got a meal made for dinner.

I hope you enjoy the pics of what we ate. We are suppose to eat them at lettuce wraps but we dotn buy the lettuce for that, The romain lettuce is somewhat healthier so we just cut up the lettuce and pilled the shrimp mixture on top of the lettuce.


I would recommend that you use lettuce wraps not to cut it up. Also we used a hard noodle not the chow mein noodles it calls for. and it was good but it might taste different witht he chow mein noodles.
